Is it possible to set chat to a group chat instead of one-on-one? Also, can transcripts be saved from chats? If so, can you tell me how to do that? If not, then do you have any suggestions for a script/software that will allow a group chat that is compatible with JCow?

Hi Marie, it is impossible to set a "group chat", and I don't know a 3rd part module can do this.
Currently users have to copy from the chatbox to save their chats.

There is 100s of group chating scripts in the net take the one suits your needs add it as mod. using the example from the doc. section it is not that difficult ... some can even integrate the users from your network try google
